BROCCOLI: You can use the entire raw head of broccoli, stalk and all! Because this soup is blended, you don’t have to worry about the broccoli stems being tough.
For the fastest cooking, break the fresh broccoli florets into small pieces. You can also use frozen broccoli, just make sure to thaw beforehand.
POTATO: Adding a potato is key to this broccoli soup base! The starch helps thicken the soup, resulting in an extra creamy texture.
CHEDDAR CHEESE: I like to use extra sharp cheddar cheese to get a nice bite and strong flavor. You can use pre-shredded cheese or freshly grate your own.
HOW TO MAKE VITAMIX BROCCOLI CHEDDAR SOUP: STEP BY STEP
STEP 1: In a small pot over medium heat, steam potatoes and broccoli. Cook for 8-10 minutes, until fork tender.
STEP 2: While veggies are steaming, place all remaining ingredients in the blender container. If you’re shredding you’re own cheese, do it now.
STEP 3: Add cooked veggies to the container. If your Vitamix blender has a soup setting, use this to blend the soup. If not, start blending at the lowest speed and then increase to the highest level.
Blend soup for 5 minutes, or until the soup cycle ends. You’ll know it’s finished cooking when heavy steam escapes from the lid.
STEP 4: Pour into small bowls and top with extra shredded cheese and extra broccoli. Enjoy!

Ingredients
- 4 cups broccoli florets
- 1 cup potato, chopped (about 1/2 medium potato)
- 3/4 cup milk
- 1 cup chicken broth
- 1 cup sharp cheddar cheese grated
- 1/2 teaspoon salt
- 1/4 teaspoon black peppe
- 1/8 teaspoon garlic powder
Instructions
- In a small pot over medium-high heat, steam chopped potato for 5 minutes and then add broccoli. Steam until fork tender, another 8-10 minutes.
- While vegetables are cooking, add all remaining ingredients to the blender container. If you are shredding you're own cheese, do it now while the veggies are cooking.
- Once the veggies are cooked through, add them to the Vitamix container and secure the lid. If your Vitamix has a soup setting, use this to blend the soup. If not, slowly increase from the lowest speed to the highest speed. Let the blender run for 5 minutes until soup is piping hot.
