Hi! My name is Emily and I’m so happy that you’re here!
Here at Pocket Sized Kitchen, we aim to create recipes that are fresh and flavorful. Our recipes are always homemade with simple, wholesome ingredients that are downright delicious.
I am a home cook with 8+ years of experience, but it wasn’t always this way! I started cooking when I moved to NYC for my first “big girl” job.
I quickly discovered how expensive city living is and that eating out every day wasn’t in my budget. This led me to start meal prepping to help save money. When I got a Dutch oven, my passion for cooking was unlocked. I absolutely loved cooking one-pot meals because I got to wash fewer dishes.
This has become one of my guiding principles when creating recipes for Pocket Sized Kitchen: the fewer dishes the better! If I hate doing dishes, I bet you do too! (Hopefully, you don’t have to hand wash them like I do!). I love to use kitchen appliances that make cooking faster and more efficient, like an Instant Pot and Vitamix blender. When you realize how much time you can save, why cook with anything else?!
I strive to create recipes that are easy, quick, and healthy-ish. My recipes are vegetable-focused, rich, and comforting. I believe that vegetables are delicious and want to show you how to make them shine. From soups to salads and tarts, there is no recipe that veggies can’t make more delicious.
Here are a few of my favorite things to help you get to know me a little better:
Cooking Motto: Use fresh herbs!! It will absolutely change your cooking! And add more salt, always.
Cooking or Baking: Baking (but I’ve found I’m not so good at creating baking recipes! So this blog will stay largely savory).
Favorite Food: Soup & bread. My favorite soup on the blog is my Vitamix broccoli cheddar soup.
Favorite Drink: Coffee all the way. All day, every day! A delicious chai tea latte is also pretty high up on my list.
Favorite Breakfast: Hashbrowns, not home fries. They are not the same thing and I will die on this hill. Check out my Cracker Barrel hashbrown casserole for a rich & creamy breakfast!
Favorite Vegetable: It’s so hard to pick just one! But I could eat mushrooms every day. I love to whip up my Vitamix mushroom soup and arugula mushroom salad for easy & fast meals.
Favorite Dessert: Sticky Toffee Pudding
Favorite Kitchen Tools: My Le Creuset Dutch ovens and silicone spatula.
