This recipe is everything you could dream of in a soup- creamy, delicious, and oh so easy. I didn’t know cooking could be this way!
Soup is one of my favorite foods- in fact, to me it is its own dang food group. One year, it was all I ate (seriously).
I’m crazy for soups because they are a one-pot meal. The fewer dishes the better, amiright?! But did you know you could take things to a whole new level and use a blender?
OH. EM. GEE.
I feel like I must be the last person to know you could make an entire soup in a blender. And not just at the end of a recipe to puree ingredients. You can make WHOLE ASS SOUP. IN A BLENDER.

The Best Spinach Soup
One of my favorite things about this soup is the color. It is oh-so-beautiful and VIBRANT. Just looking at it makes me feel instantly healthy.
Thick and decadent, it’s almost sinfully luscious. But it’s packed with leafy green goodness, so you are actually doing a great job at fueling your body. Spinach is high in iron, vitamin C, and calcium. I know Popeye would be proud.
So what else makes this soup so dang delicious?
Potato: This helps thicken the soup so it is nice and creamy.
Olive oil: For richness.
Onion & garlic: To help round out the flavor.
Broth: I like to use low sodium chicken broth. Vegetable broth would work here as well!
Milk: I like to use whole milk to add richness, but any milk would do.
Gated cheese: This gives a faint nutty flavor. I like to use parmesan or Pecorino Romano.
Salt and pepper: To make the flavor pop.
Nutmeg: For a faint earthy flavor.
Spinach: I love using fresh spinach for this recipe. One large bag should do the trick.
This recipe makes about 6 cups of soup, which is enough for two very generous dinner portions. It also works wonderfully as an appetizer. If you make this for guests, I can guarantee they’ll be impressed!
Blend It Up
This soup comes together in about 15 minutes, and the hardest part is chopping onions (*cries*). Am I the only one who cries every time I chop an onion?!
Start by boiling the potato in a pot of salted water. This should take about 10-12 minutes until the potato is fork tender.
Next sauté onion and garlic for 5 minutes until translucent.
Ok, now this is where the magic happens!
Add all the ingredients to a blender. Slowly increase speed from low to medium, blending all ingredients for 30 seconds. Slowly increase the speed to high. Walk away for 5 minutes and return to PIPING HOT SOUP.
It’s so easy I could cry. I worry I may never use my soup pot again…
VITAMIX SPINACH SOUP RECIPE (CREAMY AND FAST!)
Equipment
- Vitamix Blender
Ingredients
- 1 potato diced
- 1/2 tablespoon olive oil
- 1/2 cup onion diced
- 1 clove garlic diced
- 2 cups chicken broth low sodium
- 1 cup milk preferably whole
- 1/4 cup grated cheese parmesan or Pecorino Romano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
- 3 cups spinch fresh
- 1/2 lemon wedge optional
Instructions
- BOIL: Bring a small pot of salted water to a boil. Add potato and cook until fork tender, about 10-12 minutes. Remove from water and add to blender. Set aside.
- SAUTE: While potatoes cook, heat olive oil in a small pan over medium heat. Add onions and garlic and cook until translucent, about 5 minutes. Add to blender.
- BLEND: Add remaining ingredients to blender except for the lemon. Set blender to hot soup setting and hit start (it should automatically set the time and power off). If you do not have a hot soup setting, slowly increase the speed to medium and blend all ingredients, about 30 seconds. Then increase speed to the highest setting. Let blender run for 5 minutes, 45 seconds.
- ENJOY: This soup is best enjoyed PIPING HOT out of the blender. I love to add a sprinkle of cheese on top, with a squeeze of lemon.
